Rochefort 10 recipe?

Anyone got a Rochefort 10 recipe knocking about? In particular how to recreate the kind of burnt sugar/caramel flavour. I've seen all kinds of weird and wonderful recipes knocking about online but none of them seem to ring true. I'm guessing a big dose of the extra dark candi syrup is in order, like this stuff:

Actually theres some good info in Brew Like A Monk. OG: 1.096 ( :D ) ABV (11.3%) ( :D :D ) ADF 89%, IBU 27, Pilsener & Caramel malts, White sugar, dark sugar, wheat starch, coriander, styrian goldings & hallertau hops, Rochefort yeast, yeast is pitched at 20C allowed to rise to 23C.

Probably need something like 20% sugar to get that high ADF ?

Any chance of the full reecipe, myst? ;)

I had a couple of bottles of this to round off the night at the LAB 1st birthday party and despite the hangover its a firm favourite now 8)

It's some good stuff isn't it. Sadly thats all the info the book gives. Trying to knock up a recipe in Beersmith but i've got limited experience with Belgian ales.

So far i've got 68% Lager malt, 5% Aromatic malt, 5% Special B malt, 11% Extra dark candi syrup, 11% Plain sucrose for the fermentables. No idea if that will be anywhere close :?

I know White Labs do the Rochefort yeast and we know the temps so that's a start.

I would probably drop the sugar and use all dark candi syrup if you can

Rochefort 8 has a kind of musty taste that I don't really like. Interesting recipe though.

Oblivious, i've listened to the podcast before and it's quite interesting. Sean Paxton is taking the piss with that recipe though. Six different sugars and a dozen grains ??

How's this looking folks? Planning on using that extra dark candi syrup i posted a link to. More sugar needed maybe? The syrup is going to cost a fortune too.. maybe go with the crystals? :?

Yea there is a lot in it probably to much buts Its really trying to create the complexly, remember this beer is in realty just 80% pils ans 20% dark candy syrup.

His other Belgian strong dark with a some what similar bill , “A Saucerful of Secrets” has done very well.

Not really, thats about a tenner of hops :lol:

Probably just bung in some high alpha stuff. It's not exactly a beer about hop character afterall.
