A Saxon summer

Although I'll have a summer brew going I was also thinking of doing a saxon brew.

This would be Lambic but I would like to have the brew available for a little longer so I'd like to try and replicate the taste of Lambic but with standard yeast and fermentation. Does anyone have a suggestion about which standard yeast has a taste profile to Lambic produced beer? I'm guessing a fruity beer. Can you do a lambic ferment then run it into a secondary in bottles?

Having a look to try and identify the malt used, a suggestion here.. ok 5000 years.. maybe the old Golden Promise will do :)

This would be a simple recipe
Golden Promise - a replacement as getting hold of something like the 5000 year old Bere variety may be a problem! (ok, I admit I shot them an email to see if they'd sell me some of their Bere variety, currently awaiting a response).
Elderberry blossom as Gruit
Bramble Cross to give some backbone to the blossom taste.

Hmm.. the beer making is getting interesting..

Sorry no help but interesting stuff fella,good luck with this i love hearing and tasting the old recipes and ways of food and drink.

I dont know too much about this, but If its in the style of Lambic, I think they use old Hops. The hops arent there for flavour, just to be used as preservatives. I dont know if hoppy flavours would work. But then I dont know much about this beer you're brewing. Hope it turns out well!

Yup the hops are very dry, so no taste - I thought that just adding a little hopping would work with the floral taste.

Maybe use elderflower or coriander for flavour and oak leaf/chips for any bitterness,just a thought of old things.

According to this page (on the same site), Valhalla Brewery in Shetland also do a Bere-based beer. You could always try them too to see if you could get some grain from them (or if they'll tell you where they get theirs from)
