A Stout for Tomorrow?

I'm thinking of brewing a Dry Stout tomorrow - with a bit of hop flavour.....so far, I'm looking at this for 23L

Black Dog Stout

Pale Malt 3.5Kg
Flaked Barley 1 Kg
Roast Barley 0.25Kg
Carafa Special III 0.5Kg
(Maybe also 100-200g of Chocolate Malt)

Pacific Gem 14% AA, 25g, FWH for 36 IBU (for the oaky, blackcurranty flavour, even though they are FWH)
NZ Cascade 8% AA, 20g @ 15 min for 8 IBU

Although - I'm not convinced about the Cascade for this one......they worked well in the 4SoS I did previously, but what I really want is a kind of peppery taste to this. What hops would give me that without being over powering - I'm thinking maybe a touch of Green Bullet ??

Northdown? Theyve got a similar aroma to challenger but I like the richer flavour.
By the way, you were gonna test your brute of a IRS stout a few weekends ago. How did it taste?

Aaaahhh.....In the end i forgot the late hops all together and just did the bittering addition, but with Green Bullet.

As for the IRS - still haven't got round to it. I'm in the US this week, but back home tomorrow, so might give it a go then....

You could try Brambling cross; gave this taint to my Deuchars a while back, hmmm mmm

Roasty Bramling cross stout, hmmmm..... I feels a brewday coming.
