I'm not fond of Simcoe myself, I find it has a harsh taste, though it does mellow with time.

I have heard it can give passionfruit/pinapplesq flavours. Which is something I think would add another dimmension to the beer. As it will have citrus/piney elements from the hops already included...

How long would you say it takes the simcoe to be less harsh? Also It would only be an aroma/flavour addition.

When I did an IIPA with simcoe it took about six months to stop being harsh tasting.

Offt. That is a long while.

I may give them a go anyway due to the flavour Characteristics that are involved with them.

Looks good, most IIPA recipes see include some simple sugar to help with attenuation, so it is not too syrupy.

Do you think I should drop the pale malt by 500 grams and replace with some table sugar?

The 'Pliny the Elder' (supposedly the definitive IIPA) clone from Brewing Classic Styles has 11% sugar and an OG of 1.080 to help with the attenuation. I think it would be a good idea to replace 5 - 11 % with table sugar, yeah.

It also has close to 200g of dry hops in a 5 gallon batch :shock: :shock:

Including simcoe :D

200 grams of dry hoping...damn.

I thought I was pushing the boat out with what is the equivelent to 135.

Yeah I will replace 500grams of the pale malt with some sort of simple sugar, that does bump the OG up to 1094.

Acht well if your going to go a bit nuts why not bump up the abv by 1% or so.

Should finish at something like 10% abv and 155IBUs. Hopefully the yeast wont be too knackard to carb the bottles.

I like Simcoe! Did a beer with them recently and it was great. Go for it. I'd definitely use them for bittering in an IIPA....in fact, I'm thinking of redoing this beer using Simcoe for the 90 minutes addition. I'll probably also add some jaggery (if I can find it).

What size batch is that ? If it's 23L, you won't get 1088 out of 6Kg of Malt....

my local sainsburys sells Jaggery adm, and its a relatively small one too.

No thats for 15L.

Will be bottling in 330ml bottles so that will end up being at least 40 bottles. Which is plenty for a massive beer like that.

Sorry to get confused but are you saying you would use simcoe for bittering rather than the aroma/flavour? Was looking to see if I could get the passionfruit/pineapple thing going on that Simcoe is supposed to produce.

Cheers ADM! I wondered what size batch that was as well! IPA and that amount of IBU?!?!, Oh momma! I just finished a weekend of brewing, managed to get 88 litres done with my home harvested hops including the Mysterio IPA. They are fab beers. Subsonic
