Hello Everybody

It's been a while since I last graced these pages, then again, it's been a while since the cheeky dog brewery had any output - a situation I intend to remedy in the near future!

I have spent quite a long time in Europe over the past year, and have acquired a taste for stronger French and Belgian beers, my current absolute favourite being Brasserie Anoeullin's L'Angelus. I encourage anyone to try it - it really is rather good, and at 7% it doesn't take too many to make me fall over! :D

I would love to have a try at replicating it, but, if I am totally honest, haven't got a clue where to start in formulating a grain / hop / yeast bill, let alone water treatment etc.

The only thing I have managed to accrue over the past few months is a reasonable stash of swing top bottles to stick it in!!!!

Any advice or opinion is very welcome.

Well I speak enough to get by, and i know some very fluent people, but i can't imagine them wanting to divulge too much.

As for email, i can't even find a website!

In my opinion it is always worth emailing breweries. Some reply, some don't, but either way you don't have much to lose.

Lovely beer isn't it? According to Ben McFarland's Worlds Best Beers the grist contains 30% unmalted wheat.

I th nk the grist for the beer is in the Book "Farmhouse ales" I will check

But I a pretty sure the use around 30% unmalted wheat

Sounds like a Saison type of beer

I'd be tempted to go for 70% pils malt, 30% unmalted wheat, some noble hops and a Saison or Bier de Garde yeast

I'll be clearing the brewery out over the next few weeks. And then buying supplies in, so I'll do some more digging in the meantime.

I've not received a response from the brewery yet!

Its actually 30% buck wheat not wheat and I would presume its un-malted. I have seen buck wheat (flaked) in a few good health food shops
