My first 4 brews were done with so4 and are fine, but now im looking for more charature and a sweeter, maltier taste so am doing me next brew or two with Windsor. Ultimatly i want to move to using slopes and have 2 or more slopes for use at all times i can propergate up when needed. I have compared my brews with draught beers and bottled beers and have decided i prefer a sweeter brew with more mouthfeel and malty taste...i think i can better achive this with a less atenuating yeast and one that better conveys the malt taste.
Anyway, id give so4 a go then move on to windsor and see which you prefer.
