What yeast to go for.

Hi all I don't no what yeast to go for on my 1st AG 2 brews, they will be flowers ipa and wadworth 6x, I have 3 packs of Safale S-04 Yeast, but any advise on what to go for, all and any help please.

My first 4 brews were done with so4 and are fine, but now im looking for more charature and a sweeter, maltier taste so am doing me next brew or two with Windsor. Ultimatly i want to move to using slopes and have 2 or more slopes for use at all times i can propergate up when needed. I have compared my brews with draught beers and bottled beers and have decided i prefer a sweeter brew with more mouthfeel and malty taste...i think i can better achive this with a less atenuating yeast and one that better conveys the malt taste.

Anyway, id give so4 a go then move on to windsor and see which you prefer.
