We're having a barbecue in early September and due to work, DIY and the fact that my move to all-grain has not been entirely successful, I find myself short on beer for the event and was hoping you guys might be able to help me out with a recipe. Listed below are what I'm looking for and the ingredients I have:
- I'll be brewing on Tuesday (10/08) and it needs to be bottled by 22/08 and ready to drink by 05/09.
- I'm looking for something fairly bitter, but not too bitter and low-ish in alcohol - around 3.5% to 4%.
- 25 Litre brew length.
I have:
- 4kg Light DME.
- 67g Goldings (4% AA).
- 45g Fuggles (4.1% AA).
- 113g Saaz (3.2%).
- 113g Target (10% AA).
- Safale S-04
I know I'm pushing it with regard to time for maturing, but was hoping someone may have some ideas. Thanks!

I just threw a couple of the ingredients into a Beer Engine and came up with;
For 25 litres
2.5Kg Light DME
37g Target (60 min boil)
25g Fuggles (20 min)
25g Saaz (20 at flame out)
OG 1038
FG 1010
ABV 3.7%
This should give good bitterness (44 IBU) and a light colour (10 EBC). Saaz and Fuggles adding aroma and a depth of hop flavour, as well. If you wanted to increase the bitterness, just add a greater quantity of Target at the beginning.
I am sure somebody will correct me if I am talking out of my a*se

It's a personal preference, but I'd use goldings at the end instead of saaz otherwise it looks good, although a lttle crystal couldn't hurt.
The time frame you have will be no problem for a lower strength brew like this.
I'm just here for the beer.
