Belgian Honey Beer - Next Week's Recipe

Ready for another Belgian beer me thinks! Had a bottle of Barbar a while back and liked the idea of honey in a Belgian speciality beer. Here's what I've come up with. Suggestions welcome!

Belgian Honey Beer
16-E Belgian Specialty Ale

Size: 25.0 L
Efficiency: 80.0%
Attenuation: 87.0%

Original Gravity: 1.079 (1.026 - 1.120)
Terminal Gravity: 1.010 (0.995 - 1.035)
Color: 3.69 (1.0 - 50.0)
Alcohol: 9.09% (2.5% - 14.5%)
Bitterness: 29.9 (0.0 - 100.0)

Ingredients:
6.0 kg Lager Malt
150.0 g Torrified Wheat
1.0 kg White Table Sugar (Sucrose)
52.0 g Hallertau Hersbruck (2.5%) - added during boil, boiled 90 min
40.0 g Saaz (3.5%) - added during boil, boiled 90 min
12.0 g Hallertau Hersbruck (2.5%) - added during boil, boiled 10 min
12.0 g Saaz (3.5%) - added during boil, boiled 10 min
10 g Grains of Paradise - added during boil, boiled 3 min
20 g Clementine zest - added during boil, boiled 1 min
600 g Honey - Added to secondary
Yeast - Duvel Strain


Quite a lot of honey I know. I do want it to be a main player though.

Make sure the honey is pasteurized.And let it ferment for a longer time.
When you bottle it underprime it as there are a lot of complicated sugars in there that take a long time to ferment out.

Have you got a particular Honey in mind Floyd.

A nice Orange blossom honey would be the job in there, I imagine!

Yep, will pasteurize the honey. Will only bottle when predicted FG is achieved. Should end up at 1010 like my last one as similar grain bill and same yeast. I'll continue to apply heat when honey is added; at 28c, everything should ferment out! :-)

Probably a decent one from Sainsbury's. Was thinking about an Orange blossom but decided on the Clementine zest instead. Have used zest in the past so have a better idea what I'm doing.

If I were doing that beer, I think I would drop the grains of paradise and throw in some nice Indian corriander. The grains of paradise is going to give you sort of a peppery taste while the corriander is going the enhance the orange flavor (similar to spicing a wit). I have however used grains of paradise in a Saison and it worked out just fine but if I were doing this beer I think I would go for the citrus notes to try and play up the honey (as usual, all that if just the opinion of one Texan, take it for what it's worth). :D
Drinking:Saison (in bottles), Belgian Dubbel (in bottles), Oud Bruin (in bottles), Olde Ale (in bottles),
Abbey Triple (in bottles), Munich Helles, Best Bitter (TT Landlord clone), English IPA
Conditioning: Traditional bock bier, CAP
Fermenting: Munich Dunkel
Next up: Bitter (London Pride like), ESB
So many beers to make, so little time (and cold storage space)

Old thread I know. Bit slow to act as normal. How did it turn out ? I ask because I made the clone brew version last night. With a few miner improving of couse.
