I want to produce a light summer beer for a friend who normally drinks
Carlsberg and hates hangovers. He says the taste isn't great, but
it's not strong and can be drunk instead of sipped.
I tried making something like this before with AG and not even the
snails were interested in the 3% beer I'd made, and so, I have to up
my game and be a bit more methodical in my search for a recipe. 3.5%
would be perfect, 4% is also an OK compromise.
My current plan is to use a no boil kit (Brewferms Pils 12l, say),
expand it to 20l and split it up into 2 cornies to ferment, adding
sugar to hit the abv target of 3.5% and 4% respectively and now or
later on hops in some form.(extracts, dry hopping, hop tea into the
primary, hmm)
Has anyone tried this approach?
Finally, as a stupid question that I cannot test right now as I don't
have a completed bottle handy, if I make a good 5% lager kit (say, the
continental lager 3kg from Munton), could I get away with simply
adding some plain water to the glass? Would that perhaps work with an
add-sugar kit too?

You're fermenting in a corny?
If i understand you, you want to make a make a kit lager, but water it down and add some sugar to up the ABV? This will be watery and horrible.
I could advise on a tasty all-grain lager-like ale with a lower ABV but with kits you don't really have any control.
