London Pride clouding

I'm looking to brew up London pride next :D , i have not brewed up for a year or so but i'm still a newbee of all grain brewing with 5 brews done all grains ales ( using a cool box as i think most of us use,)my extract starts in the kitchen, ferments in the spear bedroom, bottled in the kitchen left in boxs in the spear room for 5 to 8 weeks, With the brews i have done before they end up being clouding ( clouding in light colour ales i brewed, so i imagine dark ales i do will be clowdy as well,) help please with you pro brewers please on things to do to prevent clouding, this the the recipe i'm going to next : London Pride.

Fullers London Pride - 25 litres


25 litres OG 1.040 ABV 4.1% 30 units of bitterness

OPTIC PALE MALT 3900 gms
FLAKED MAIZE 306 gms
CRYSTAL MALT 130 gms
Fullers use caramel to obtain 24 units of colour.I found 1and a qurter teaspoons brewers caramel gave the right colour.

HOPS Boil time 90 minutes
TARGET 11 gms
NORTHDOWN 10 gms
CHALLENGER 11 gms

10 gms of northdown added in the last 15 minutes

recommend the use of WYEAST 1968 ESB yeast as this is Fullers own yeast.

Are the bottles cloudy at room temperature or are you trying to cool them down before drinking?

If it is the latter it is probably chill haze.

Hi,

Are you using Irish Moss/Protofloc?

and finings?

Hi no finings, but i always use Protofloc

Shouldnt be that then, I dont use finings and im usually clear within a week or 2..

Do you drink them at room temperature or chill them?

Have you ever kegged? If so, is it still cloudy?

When i got the clouding it was from the bottle, room temperature,
My next brew London Pride will be in a cornelius keg.

How long do you boil for? What yeasts have you had cloudiness issues with?

Hi i always Boil for 90 minutes, as for the yeast i used a few, English Ale Yeast WLP002 / British Ale Yeast WLP005 i think one or two others !!

Do you ever get any off tastes? and how is the carbonation in the bottles?

only bottles with coopers sugar drops 1 per bottle carbonation was ok, but i will be useing cornelius keg next with Co2. i did not get any off tast with what i brewed, just clouding on 1 or 2 brews.

Hi Rich

Could it be the Flaked Maise causing the cloudyness.
Thats the 1st time I've seen maise used in a Pride recipe, Might be worth tring a brew without it.
I brew Pride quite often and it always clears in a few weeks. I use Protofloc.
If you have a fridge big enough, It may be worth cooling down as close to 6c for a few days, before bottling/ or Corny. It can help it to drop clear.

There is something else going on here. When using the Fuller's yeast I end up with extremely clear beer inside of a week (and I don't use finings or filter the beer, just at profloc tablet 15 minutes before flame out). The recipe I use for London Pride also has a bit of flaked maize in it and I have never had a problem. Hell, I have used much less floculent yeast strains than the Fuller's stuff and up to 20% corn and still not had a haze problem. I have a sneaking suspision that maybe you are not converting all the starches and that is what you are seeing in the beer. What does the beer taste like? I always mash for 90 minutes and frankly, I don't even bother testing for converstion since I've never really had an issue (I bet I haven't done the iodine test in over 10 years and that spans many, many batches). Some strains will clear faster than others of course (and the Fuller's stuff is the undisputed leader when it comes to dropping bright quickly) but I can even get heffe yeast to clear if I leave the beer alone long enough. If the issue is not conversion, could it be that the beer is infected? Anyhow check your thermometers to make sure your mash is the temperature you want when mashing, sometimes they get out of wack and then all kinds of interesting issues crop up. I guess if you can't get rid of the haze issue I would suggest developing a taste for wheat beers. :D
