Help with a recipe for a red ale?

Post by Mattb » Wed Aug 03, 2011 1:25 pm

I'm trying to assemble a recipe for a red ale, with a good knock-out hop punch and aroma. What do you think about this for a starter?

2500.00 gm Pale Malt (2 Row) UK (5.9 EBC) Grain 50.61 %
1750.00 gm Munich Malt (20.0 EBC) Grain 35.43 %
400.00 gm Cara-Red (50.0 EBC) Grain 8.10 %
250.00 gm Caramel/Crystal Malt - 40L (100.0 EBC) Grain 5.06 %
40.00 gm Black (Patent) Malt (1300.0 EBC) Grain 0.81 %

20.00 gm Nelson Sauvin [13.00 %] (90 min) (First Wort Hop) Hops 33.1 IBU
15.00 gm Nelson Sauvin [13.00 %] (60 min) Hops 21.1 IBU
20.00 gm Motueka [6.00 %] (30 min) Hops 10.0 IBU
20.00 gm Motueka [6.00 %] (15 min) Hops 6.4 IBU
1.00 tsp Irish Moss (Boil 10.0 min) Misc 30.00 gm Motueka [6.00 %] (7 min) Hops 5.2 IBU
30.00 gm Motueka [6.00 %] (0 min) (Aroma Hop-Steep) Hops

Estimated OG: 1.053
Estimated Bitterness: 75.8 IBU
Estimated Colour: 30 EBC

I was thinking Wyeast 1968 London ESB, but I've also got Wyeast 1187 Ringwood Ale and Wyeast 1084 Irish Ale, if either of those would be more appropriate.

I'm hoping that the cara-red, and the tiny amount of black malt will combine with the munich malt to priduce a nice deep red colour.

Looks good. I've done a similar red ale, but probably with a touch less bitterness in favour of bucket loads of post boil and dry hops. I used Nelson Sauvin and Amarillo, but Motueka will do the job very nicely. I'd double the aroma steep, either with another 30g of Motueka or 30g of Nelson Sauvin. Then dry hop with the same amount and more again...

@picket: Taking on board your suggestions, I have adjusted it to this ...

2500.00 gm Pale Malt (2 Row) UK (5.9 EBC) Grain 50.40 %
1750.00 gm Munich Malt (20.0 EBC) Grain 35.28 %
400.00 gm Carared (50.0 EBC) Grain 8.06 %
250.00 gm Caramel/Crystal Malt - 40L (100.0 EBC) Grain 5.04 %
30.00 gm Black (Patent) Malt (1300.0 EBC) Grain 0.60 %
30.00 gm Chocolate Malt (886.5 EBC) Grain 0.60 %

15.00 gm Nelson Sauvin [13.00 %] (90 min) (First Wort Hop) Hops 24.8 IBU
15.00 gm Nelson Sauvin [13.00 %] (60 min) Hops 21.0 IBU
15.00 gm Motueka [6.00 %] (30 min) Hops 7.5 IBU
15.00 gm Motueka [6.00 %] (15 min) Hops 4.8 IBU
1.00 tsp Irish Moss (Boil 10.0 min) Misc
30.00 gm Motueka [6.00 %] (7 min) Hops 5.2 IBU
30.00 gm Nelson Sauvin [13.00 %] (0 min) (Aroma Hop-Steep) Hops -
40.00 gm Motueka [6.00 %] (0 min) (Aroma Hop-Steep) Hops -
40.00 gm Nelson Sauvin [13.00 %] (Dry Hop 3 days) Hops -

It's brought the bitterness back a bit to 63.3 (estimated), but added a whole load of aroma. I've also added a little tickle of chocolate malt to get the orangey-red character it can give.

@deanrpwaacs: Actually, that exact post is where I took my inspiration for the grain bill - but I deliberately scaled back the pale malt and the munich malt, to bring the OG down a little and added the cara-red for extra colour, and now the little bit of chocolate malt.

Now all I need is a name. Any ideas?

Like the look of that. I know that Brew Dog use Nelson Sauvin in 5am Saint, and if it turns out a little like that then you'll have yourself a great beer.
