Yeast
Safale S-04

Grains/Extracts/Sugars
5 kilograms
Maris Otter 4.7 kilograms
Wheat (torrefied) 0.3 kilograms

Hops
Galaxy 13.4%, Whole 20 grams 60 minutes (+30)
Galaxy hops 13.4%, Whole 20 grams 15 minutes (+75)
Galaxy hops 13.4%, Whole 15 grams 5 minutes (+85)
Galaxy hops 13.4%, Whole 15 grams 0 minutes (+90)

Malt bill is the same as the oakham I brewed last month ,very light in colour and taste with 04 as a neutral yeast to let the hops be the star of the beer , all suggestions welcome.

Try US05 or White labs 001 if you really want the galaxy to sing.

I have been using Galaxy for over 12months and they make a great beer, I think they are best suited to big 7% plus beers though dried out with Jaggery Goor or other types of sugar.

Hi

Very similar to a all Galaxy brew that I am doing at the weekend. Only hops a bit more towards the end.

OTTOMH, mine is about 4KG marris, 0.3Kg Caramalt, 0.15KG Torri Wheat. (27l aiming for about 4%ABV)
90 mins boil, with the bittering hops at 90mins (35IBU IIRC) , then additions at 5mins 0mins (45mins steep), and then I'm going to dry hop a small amount. (Planning on 100gm over the whole boil)

I'm planning on using WLP007, (I often use nottingham, but I want something that doesn't attenuate so much, and I am not a fan of WLP001 as I bottle some of my beer)
