Big Keeping Beer

Hi Guys,

With the imminent arrival of our first little 'un I'm planning on getting a beer on then cracking open a bottle or two on their birthday over the next, well how ever many years the bottles last- it'd be nice to get to 18! I'm thinking of a big IPA / barley wine number. I've got a collection of 275 & 330ml bottles, about 12 litres worth, that I'll cap and seal with wax and keep in the garage / loft to keep them out of temptations way!

I've not done a beer as big as this before so I thought I'd keep it simple:

I'm guessing 2 packets of Nottingham will do the job? I'm undecided whether to rack into a corny to condition first for a few weeks / months and then maybe reseed with yeast at bottling, though in the spirit of keeping in simple I'll probably just prime and bottle it!

Congrats on the iminent arrival mate! It's the best feeling in the world! our little lad is 7 weeks now and I can hand on heart say it has been the best 7 weeks of my life! Don't get me wring, you don't know how much sleep you don't need, but you won't give a crap about yourself once little one arrives! :D I spent 6 hours at work the other day before someone pointed out I had my trousers on inside out! :D Tired wasn't the word! :D


Beer looks good! I love maber malt, it'll lend a nice dryness and toast to the beer! I still need to sort out a recipe to do the same! :D

Cheers LB, 3 weeks now until we're due, Becky finished work yesterday- it's all becoming rather real now!! Really looking forward to it- but I don't do well on little sleep as it is so we'll see how that goes!

Hope to get the beer on the go on Sunday, maybe I'll get the soon-to-be-granddad-father-in-law round to help out!

Good luck with the impending arrival! They are great :) 2 packs should be fine there. Amber is a lovely and oft-overlooked malt.

I read somewhere that dark and hoppy beers hold up best over time.
I'm just here for the beer.

Don't forget boozy. Dark, hoppy*, boozy. The three factors which can extend a beer's keeping time. Two of three is good, three of three is best!

*well bittered hoppy rather than aroma hoppy.
