Amarillo The Irish Red Head

Have an unschduled brew day tomorrow, so have been thinking about an Irish Red using Amerillo Hops,

MO base, crystal, carapils, wheat, roasted, amarillo, safale 04 / 05 combo

Anyone tried / have a recipe

This isn't exactly what you asked for, but it's delicious. You could use it as a starting point and simply adjust the recipe to your malts, hops and yeast. I bet your Amarillo hops and yeast blend would come out really nice, too.

SEYMOUR BREADY RED
all-grain recipe
6 US Gallons = 5 Imperial Gallons = 22.7 Liters

43% ≈ 5lb ≈ 2.27kg, Maris Otter Two-Row Pale Malt
43% ≈ 5lb ≈ 2.27kg, Wheat Malt
8.6% ≈ 1lb ≈ .45kg, Carapils
4.3% ≈ .5lb ≈ .23kg, Pale Chocolate Malt
1% ≈ 2oz ≈ 57g, Steel-cut Oats

Bittering hops: 1oz = 28g, Cluster, 90 minutes
Flavor hops: 1oz = 28g, Saaz, 30 minutes
Aroma hops: 1oz = 28g, Hallertau, 10 minutes

MASH @ 151°F/66°C until converted

BOIL 90 minutes

Pinch of calcium carbonate in mash to enhance color and malt profile, pinch of gypsum in boil to make the hops pop, Irish moss near end of boil for clarity.

YEAST: De Dolle yeast strain = Wyeast 3942 "Belgian Wheat"

OG ≈ 1.055
ABV ≈ 5.5%
IBU ≈ 31
SRM ≈ 15

Cheers for that, will have a play around with the hops I have, possible Amarillo /Magnum or Cascade combo.

Other Hops I have at the moment Bramling X,Galaxy, Cita, Target, Fuggle, Stella, Summer, Columbus, Aramis, Flyer

Geez! Can I come over and play?

You'll know more about some of those obscure ones than me, but what about Fuggles in the early bittering stage and a combo of Galaxy, Amarillo, and Citra in the flavor and aroma stages? I dunno. But with all those fun choices, keep the Cascade out of there, dammit! :)

The only thing I dont have is any steelcut / pinhead oats, would coarse oatmeal be the same thing?

PERFECT. Any ol' oats from your kitchen, a handful in every batch, and you'll thank me: quick oats, pinhead oats, rolled oats, flaked oats, Scotch oats, etc.

5kg Maris O
5Kg Wheat
0.9Kg Carapils
0.3 Kg Dark Choc
0.1Kg Oats
15g Magnum 90min
20g Amarillo + 20g Citra 20mins
20g Amarillo + 20g Citra 10mins
2 x safale 05

1.056SG, 31.8IBU 30.50EBC Allgrain 45ltrs

Any comments / possible improvements welcome. Galaxy for the Magnum?

Not too bore everyone with a brewday, but thought I would at least post a couple of pics, 1st the grain money shot and second the wrapped up for the night shot.

Also messed around with a double infusion mash, some new equipment, so a little into the unknown but overall a good brewday. A couple of points under on the gravity tho, cant wait to see what this one comes out like.

Took a quick sample today to see how things were progressing, couldn`t resist a little taste either.

If the initial taste is anything to go by this is going to be a cracking brew :)

Glad to hear it, barneey, so far so good. Cool rig, by the way. What's the capacity of that stainless steel fermentor?

Its a 14 US Gallon morebeer one, so aim for 2 corny kegs + a few bottles out of the thing. Blow off is just incase things get out of control, not for harvesting (yet), couldnt find a big enough fridge for the next size up. :)

Had my first pint of this last night, will post a pic of the pint later.

More of a dark ruby colour, but it tastes bloody fantastic, another banker for the kegs

Yeah, this is based on one of my most delicious recipes. I usually brew it a little stronger, then ferment with a Belgian yeast, but even so...

If I may be so bold, I'd recommend you pull aside some of this batch--say a 5L mini keg or a 12-pack of bottles' worth--stir-in some priming sugar and a bottle of Orval (containing both a primary Trappist strain and brett, which they add just before bottling) and let it do its thing for a couple months. Don't worry, the Amarillo is so strong it won't subside as much as you may think. Just may blow your mind.
