Great thread! Put the Mild directly on my to-brew-list. Which water profile do you suggest? Cheers! Marc
I use the profiles from Graham Wheeler’s calculator on this forum

Sommeliers recommend that you swirl a glass of wine and inhale its bouquet before throwing it in the face of your enemy.

The Murphy profiles are a good starting point that should be fairly representative of actual practice in British commercial breweries as opposed to some of the strange ideas emanating from across the pond :

Hi Honk ,
I've got a few Mild recipies from northern UK brewers 1930-1967 (Magee's , Dutton's , Wilson's etc) ,
I'll pop them up if anyone's interested ?

Hi all - at short notice I will be brewing 12l Highgate mild tomorrow.

In planning a few weeks ago I intended to use S-04 but by chance I can have my brewday tomorrow.and don't have any Nd can't get any for tomorrow.

I do have Mangrove Jack liberty belle yeast on hand but will it be to estery/flowery for a mild?

Go for it. Esters normally do better with temp, so keep it in the lower range if you want to reduce them.

Pack says 18 to 23c. Try it at 18c.

Be fine 👍🏼👍🏼

I've used Liberty Bell a fair bit. I think it would be perfectly good for a mild. It's not super estery in my opinion, it's quite 'neutral' (which may may not be a good thing depending upon what you want), unless, I guess, you ferment at high temps. It's a bit little more attenuative than S04 in my experience, and I would mash at the higher end of the spectrum (assuming this is a mashed beer). I think I prefer Liberty Bell to S04, but then everything is subjective when it comes to beer.

Cheers both of you.

I usually ferment at around 20°C with Liberty (I can control fermenting temps) but Mash's thought of fermenting lower makes sense. All my brews using Liberty have always slightly under attenuated (I've even started setting my Brewfather settings to the lower end of 74%) so Bitter Dave's comments also make sense and I do indeed want to keep it neutral (hence the thought of using s-04).

Didn't end up brewing today as weather was too shite to keep shifting between garage and kitchen and was sorting out going away for wife's 50th while she was at work today (Brugge and Belgian beers here we come !)

But reckon I will give Liberty a go at 18°C and see what I think.

I have started using 19°c for Nottingham (cml) and that comes out a treat.
Hmm. Shall a drop another degree?...
