Hi all
Do you think the following recipe would work
10lt brew
500g ginger root
100g honey
1x lemon rind and juice
2kg light dme
1x champagne yeast
Add the grated ginger, lemon and honey to 5lts of water and simmer for 60mins. Sieve off the ginger etc. and bring to the boil, add the dme.
Transfer to the FV and top up the 10lt @ 20degree add the yeast.

I'm not 100% sure but wouldn't champagne yeast struggle to consume maltose? Pretty sure I read a paper about how yeast are specialists in their own food source. If this is the case it would probably still work, just not that great. Someone ruler will come along and let us know soon if I've dreamt this or not.

Some form of ale yeast would be best, safale us-05 I hear is a great one to use for ginger beers. As it didn't create too many flavours that contradict with the ginger. Give it a shot and let me know what you think. I'll be making a ginger beer myself soon so I'll appreciate any feedback from you.

I have made a lot of brews with ginger. As a flavour, it does not get bossed around by anything.

I doubt you need 60 minutes to get the flavour out of the ginger and lemon zest, but there's no harm in boiling that long I suppose unless you're putting the lemon pith in. Boiling that will make the beer bitter.
