Getting a bit ahead of myself i know, but i have a recipe in mind for next winter and just wanted some advice on a few aspects of it, what i've come up with so far is this:
Grain bill -
80% pale malt
7% Crystal
5% torrified wheat
5% Special B
3% Chocolate malt
Hop Schedule -
35g Challenger @ 60 mins
30g Bramling x @ 20 mins
10g Bramling X @ Flame out
Other additions -
1 litre Damson juice
1 litre Elderberry juice
1 tblspn Juniper berries.
I'm reasonably happy with the grain and hop schedules (although i am open to suggestions) but could do with some help on the other additions. Firstly the quantity of juniper berries, i love the fragrance from these but obviously i don't want ti to over power every thing, is one table spoon in the last 15 mins of the boil about right or too much/little?
And the fruit juices, should i treat these with pectin enzyme and campden tablets and add to the boil or to the fermenter, and if to the fermenter at what stage, straight away or after fermentation has calmed down a bit?
