Bitters Definitive Recipes List

Post by Dene » Mon Jan 01, 2018 1:27 am

Hi all.

There is a post of all the best Mild recipes on this forum. Does anyone know of one for Bitters?

I love a good Best Bitter and ESB here in Australia. Bought a fresh litre of Best Bitters from a little brewery called Block 'n' Tackle last weekend and decided to try my hand a brewing one again. I've had mixed experiences.

So if anyone can direct me to a link or we can start a new one right here and now.

I’ve had good results from this ESB recipe:

5kg pale malt
300g crystal 70L
200g torrified wheat

23L to FV
28L boil

Wyeast ESB or Ringwood

Bramling Cross and Challenger to 30 IBU at start of boil
EKG and Fuggles to 10 IBU at end.

1.054 OG
1.016 FG

65C mash for 75 min
Boil for 75 min

Not one that I know of - there used to be a recipe database on another site but that seemed to have dissappeared

Just thought of this, it has a lot as well as other beers though

Certainly one of my top 5 brews, which I've made 4 times with little variation other than the yeast. It's on the palest end of ESB, and a little over for the style by OG, but only just! The WLP007 really makes it shine.

Scarbadian ESB
Extra Special/Strong Bitter (English Pale Ale)

Recipe Specs
----------------
Batch Size (L): 20.0 (Pre starter)
Total Grain (kg): 6.050
Total Hops (g): 140.00
Original Gravity (OG): 1.064
Final Gravity (FG): 1.015
Alcohol by Volume (ABV): 6.4%
Colour (SRM): 6.9 (EBC): 13.6
Bitterness (IBU): 43.0 (Average)
Brewhouse Efficiency (%): 68
Boil Time (Minutes): 75

Grain Bill
----------------
5.000 kg Pale Malt (82.64%)
0.450 kg Caramalt (7.44%)
0.400 kg Munich II (6.61%)
0.200 kg Wheat Malt (3.31%)

Hop Bill
----------------
14.0 g Magnum Leaf (12.9% Alpha) @ 60 Minutes (Boil) (0.7 g/L)
40.0 g East Kent Golding Leaf (5.9% Alpha) @ 15 Minutes (Boil) (2 g/L)
16.0 g Perle Leaf (8.4% Alpha) @ 15 Minutes (Boil) (0.8 g/L)
26.0 g East Kent Golding Leaf (5.9% Alpha) @ 5 Minutes (Boil) (1.3 g/L)
14.0 g Perle Leaf (8.4% Alpha) @ 5 Minutes (Boil) (0.7 g/L)
30.0 g East Kent Golding Pellet (6.2% Alpha) @ 0 Days (Dry Hop) (1.5 g/L)

Misc Bill
----------------
Single step Infusion at 68°C for 60 Minutes.
Fermented at 17°C with WLP007 - Dry English Ale
Busy in the Summer House Brewery

I love the simplicity of the recipe. I'll be giving this one a go. Thanks.

This looks interesting. The Munich is one I don't think I've seen in ESB's before. I'll give it a run.

As Requested Ridleys IPA
Post by norman » Mon Oct 01, 2007 8:57 pm

Ridleys IPA 5 gallon batch OG 1035 ABV 3.6% 30 units of colour

PIPKIN PALE MALT 2360 gms
CRYSTAL MALT 360 gms
TORRIFIED WHEAT 360 gms
CHOCOLATE MALT 10 gms
INVERT SUGAR 300 gms

HOPS boil time 90 minutes 35 units of bitterness

FUGGLES 28 gms
GOLDINGS 28 gms

Add 20 gms Styrian GOLDINGS last 15 minutes.

Yeast of your choice.
Anybody brewed this from Norman's list? Was wondering how close they think it is to Ridleys standard bitter in the middle 70's. I was thinking of getting some of the Wibblers yeast and trying that.
