Improper Job

Hi Folks.

This is a 23L recipe I cobbled together during lockdown as I had an excessive amounts of Amarillo and West Yorkshire Wyeast 1469. It is very loosely based on a recipe for Snozzle’s Proper Job (PJ) – emphasis on ‘very loosely’ – which I found a few years ago on the interweb; the PJ recipe used Cascade hops and US05 yeast, and many people advocate using the yeast from bottled conditioned brews. The timings for the hop additions are the same as my PJ recipe.

The aim was to achieve ABV 5.2% (OG 1057/1018). Mash for 90 minutes, boil for 60 minutes, fermented at 20 degs c.

Grain:
5.0kg Maris Otter
500g Torrefied Wheat

Hops:
Chinook – AA 10.9%
Fuggles - AA 4.4%
Amarillo – AA 8.6%

Chinook – 13g – 60 minutes – IBU 14.3
Fuggles – 13g – 60 minutes – IBU 5.7

Chinook – 8g – 30 minutes – IBU 6.7
Fuggles – 11g – 30 minutes – IBU 3.8
Amarillo – 10g – 30 minutes – IBU 6.7

Chinook – 9g – 15 minutes – IBU 4.9
Fuggles – 23g – 15 minutes – IBU 5
Amarillo – 23g – 15 minutes – IBU 10

Fuggles 25g at TO
Amarillo 25 g at TO

Bottled with 4.1g cane sugar / litre.

I shall have to file this away to have a go at once my current plans are completed. This weekend, at my son's request, we're doing a batch of Brewdog's Punk IPA and once that's clear of the fermentation cabinet I have my eye on a batch of Seymour's Hobgoblin. Do you have a link to the original PJ recipe? That would be a good one to try as well.

Why not just pinch the yeast from a bottle of Proper Job which is bottle conditioned?

I've just bought a bottle in order to pinch the yeast out of it. It was the only bottle conditioned ale I could find when putting together a Tesco order.

I pinched the yeast out of a bottle of SN's 1689 for my last brew and it seems to have worked very well. Took 3 days to start foaming in the starter bottle but I had a good big foamy head on the brew the next morning after pitching last thing. So it got to work quickly and the smell was fantastic.

Bottled ale is a LOT cheaper than a sachet of liquid yeast. I also got a bottle of Franzisckaner Weissbier at the same time as the PJ since I fancy brewing a Dunkelweizen a bit later on.

Great idea, if you can get hold of a bottle. Especially if the aim is a cloned Proper Job or other St Austell ale. It's not pinching, though. No one owns rights to Brewer's yeasts. Like no one owns rights to oak trees. So there's no need to feel like you're doing anything wrong. It can be a great source of authentic yeast strains.

Is the 'Proper Job' bottle yeast the same as the one used to ferment it? Thought I'd read somewhere it was a different yeast which they used just for bottle conditioning.

But perhaps that's a different bottle conditioned beer I'm getting muddled with.

I've made some good Proper-ish Job beers by recovering yeast from Proper Job bottles. I think it is the same yeast as it is fermented with.

Just to confirm it is the same yeast. So far as St Austell is concerned.
One the other hand Adnames in Suffolk at one time had their Ghostship bottled elsewhere Marsdens? and only the 5l kegs had the Adnames yeast, wot a shame, had to drink 5l before having their yeast.

Really didn't know that. Not sure what you mean by "now keg2, they always were in a mini keg. Do you mean they are pasturised
and filtered before putting in the mini keg

Heron1952, Southwold Bitter, Ghostship, Broadside and Old Ale all used to be mini-cask, so exactly the same as the cask beers. All of them are now keg, so yes, pasteurised and filtered. Such a shame :(
