Hi,
I’m looking to play around with some single hop beers, roughly 12.5 litres of each.
If I input 25 litres into Brewfather this gives me a pre boil volume of 30 litres. Can I split this and if so is it a straight 50/50 or should I allow slightly more for the second half given that part will have sat in a separate vessel for an hour or so whilst the first half is boiled etc then to FV.

That should be fine. You can always top up slightly with water if there is evaporation but I would hold the second batch of wort in a sealed insulated container if you can, so it should not be an issue.

No reason why not. Good idea, just make sure the elements are always covered although this shouldn't be a problem.
