New Year Bitter

This is what I imaginatively called my first brew of 2006, which is 2 weeks in the keg now. I went for a higher bitterness level than my usual with this one, and initial tastings suggest it's a doozie, so I thought I'd share it with you.


3.7kG Marris Otter Pale Malt
250g Crystal Malt

Mash in 2 3/4 gal of water at 67C for 90 minutes (target pH around 5.2)

Boil 1 1/2 hours

Hop Schedule:

Once th boil is well underway add:

Challenger 7% 55g (30 IBUs)
Goldings 4.5% 15g (5 IBUs)

30 minutes from the end add 10g Goldings
15 minutes from the end add 10g Goldings and a teaspoon of Irish Moss.

I used Wyeast London III for this one. Your own favourite yeast will be fine.

Well, I did fill a wineglass with the brew at the tranfer to the pressure barrel, but it's been in there a few weeks now, so nearly ready to drink.....I could have one tonight in fact... :P ...however, experience has taught me the frustration of drinking 3/4 of a good brew too early, only to realise with the last 1/2 gallon how good it would have been if I'd only waited! :huh:

Yeah, I'm still on the first generation of Wyeast. The brews made with it have definitely been superior to my usual, so I'll be sticking with it from now on. I've still got 2 batches of London III to use up, but I might try a different strain next time for a bit of variation.

I had a couple of pints of this one last night, and even though I say it myself, it's a belter.

It has good body and flavour and the hop aroma and flavour is exactly the way I like it. :P :P :P :P

What do you think of a "goldings only" version of this one ?

I've got shed loads of goldings to use up see :lol: Presumably I could do an adjustment in hop quantities and replace challenger with goldings ?

For example, 75g of Goldings at start of boil should give 35 IBU's which in bitterness is the same as Jim's initial hops. Obviously flavour and I guess aroma will be different but shouldn't be a bad brew, yes ?

it seems you like goldings andy as you already use it for your caroline's

i've make a similar recipe with challenger at the star of boil and goldings at the last 15 mn, it was great :rolleyes:

Yup, it's hoppy alright. :P

However, one thing I've noticed with the Wyeast is that it can stand more hops without becoming harsh. I've been gradually increasing the hops with each brew to test this out.

The next one I made after this (which is one week into fermentation) has slightly less hops, as I think this one was on the edge of the maximum reasonable bitterness. I went for 28 IBUs.

It was a different mix altogether, using fuggles with the challenger in the copper and I think I used goldings for the late hops.

I'll have a look at the record sheet when I get home and post the full gen.

OK, just purchased some pale and crystal malt and challenger hops!

Saturday is brewday B)

Thinking of jim's original recipe but knocking the challenger content down to 30g (22 IBU) giving a total of 32 IBU.

Here's the hop schedule of new year II as promised: -

60g Fuggles (4%) - from start of boil
15g Challenger (7%) " " " "

10g Fuggles 30m from end

19g Golding 15m from end


This one goes in the barrel this weekend; chance for a sly taste! :P :P
