I did this some time ago to include in a BYO article on various forms of rice that can be used without a cereal mash. Instead of the sugar the instructions specified I used brown rice syrup.
I was kind of surprised just how nice it came out.
Don't think you're limited only to the sugar that kits recommend or malt extract. There's a lot of other options out there.
I'm just here for the beer.
