I've made ditch's stout 2x now , one to the letter and one swapping the dme for another can of coopers stout and they have both been amazing. Ive since made 2 x all grain stout's but neither of them have been as nice , can anyone give me an all grain recipe to follow to get something similar

If you happen to find one, post it in a separate thread, I was looking for a recipe recently as the Coopers kits have been discontinued hereabouts :(

Back from work.
Three FVs awaiting me full of three gallon Ditch's Stout.
Got 'em out of bath into kitchen.
Bleached bath.
Not had a drink since I left, work prevents etc.
Poured one.
Drank one.
Bleached bath.
Poured one.
Drank one.
Filled a BK.
Now getting into what's left in FVs.
I effing love it!

OMFG....! I'm on the point of Spewing again! And I haven't done this in Months! :shock:

I've just looked at my 30th ~ since I began keeping a paper log, back in July. Each time I go out there for another pint? This bugger's lifting the lid off, again! I push the lid down .....

But, this hasn't happened for some time before I started writing sh!t down. Why ....?

Dunno! It, frankly, f**ks with my head! Years of happily flashing up pictures of what a 'Real Fermentation' looks like. Suddenly, mine fizzled out :|


Temperature. That's what it is. I checked what the dials on my FTH's said, against thermometers in the FV's. Heaters were about 2 C low! They were lying to me!

Cranked them both up a couple of degrees, on their dial faces? Getting 'Brains' inside 24 hours!

Yesterday, I slammed the latest one in. I wondered: Had I interfered with that temperature control dial there? Trying to get that bit of gunk off? F**k it. Far too distracted to care, just now :( In she went.

And, this evening? That baby's almost Exploding!!! :mrgreen:

Am I refinding my mojo ....?

That's good news :) I've done two now and both nearly took over the feckin house, I swear the cats nearly drowned in the stuff exploding everywhere

And, yes; I took the lid off, look! Complete and total exposure to the air. No air lock! :shock:

Know what'll happen to it now ....? It'll go on to ferment out nicely and I'll drink the f**king lot! :roll:

It is a thing of beauty though, the blue touch paper of kit beer. :)

I put two kits in today. Bucket I was about to get amongst still had the heater in it. Switched on. Beer tasted fine.

And there I am, another bucket of wort, needing a FTH.

Option 1. Take the Aqua FTH out of FV #1. Wash it. Bleach it. Rinse it. Put it in FV #2

Option 2. Take the Aqua FTH out of FV #1. Put it in FV #2

Ozzy; I don't honestly know, mate :| I'll have a look at them, presently.

Thing is; I'm seeing a disparity between them and the actual temperature readings a thermometer in the FV gives. And I know my thermometers are fine, because I have two of them. They read lower than what ever the heater dials say.

Could it just be that the FTH's struggling to maintain the given temp? On the one hand, it shouldn't be. Because I'm using big enough FTH's that they should easily be able to manage that volume.

So, I ask myself if a plastic bucket simply lets heat out more than a glass tank? Maybe so? I'll not be messing around, insulating them, though. Doesn't matter. I'm getting the results I look for as I am 8)

Yeah; Aquael is set at 24. Fluval's on 23. Interestingly, the Aqua does brain up a few hours ahead of the Fluval.

As said though; I suspect the beer isn't actually attaining quite those temperatures. Bear in mind that I'm doing it on a concrete floor in an unheated room. On a par with a garage then.

Ditch's Top Tip, # 57!

That f**king worked well! :shock:

I was in the Chat Room today, moaning to Deadfall how I had three FV's to clean. And how ~ sick and f**king tired of trying to nail brush the cack out of the inner rims ~ I was going to try soaking them, overnight. I put them in a sink of plain, cold water at 14:00.

I just took them out. 17:30. F**king Pristine!!! :shock: I am a Very happy bunny!!! All that slavery and rim bending misery as I had at them with a nail brush is now a thing of the past! Soak those muvvas!

Tomorrow, I'll squeeze a bleachy cloth at them. Rinse them off. Make Beer!!!

Yes. Yet another of Ditch's home grown labour and time saving devices. Gifted here, only to the faithful, by the most idle man in Home Brew! Image
