Does it make a difference if its 5.7% or 7.5% AA for the cascade hops?
Also is Spraymalt and Spraydry malt different and does it matter?

last question, where did you get the cinder toffee from? looked on tescos and asda website but dont appear to have any and what could i use as a substitue if i cant find any cinder toffee?

I got my cinder toffee from a local market sweet stall (Penkridge market), but any ye olde style sweet shop should sell it.

I only added it as it was going to waste, but it has added a nice, very subtle burnt caramel kind of flavour.
Alpha acids in the hops would be down to your own preference of how hoppy you like your beer. Mine were 7.5% aa

hi mate,received everything today so going to brew tomorrow.
also got some cinder toffee from a sweetshop in sheffield.
couple more questions
a) is it crushed crystal malt i should use or whole grain?i ordered the whole grain aa didn't realise the difference but they also sent me a bag of crushed malt just in case.
b)is it ok to brew the wort with 3 litre of water as just realised that the pot i have isn't as deep as i thought,doh

a) Crushed malt is what you want to use.
b) yeah, 3 litres will be fine ... I just quote 4 litres as its mear as damn a demijohn full, which is what I use to add my water.
3) Get your sanitising solution in the bucket tonight ( I use 1/2 a cup of thin bleach to 1 full fermenter of water) and throw everything your going to use in there overnight, all you have to do then is tip the sanitiser away and rinse everything 2-3 times.
It's not worth taking risks with sanitation or you could end up with 20 litres going down the drain.

I have VWP santiser so I'll just make up a solution of that,stick everything in and then tomorrow morning at 6 all i have to do is rinse everything before starting.

make sure you rinse it well. I use VWP & I rinse everything at least twice, often three or four times. bleach & yeast don't sit well together

yes 6 in the morning,haha. its my normal time i wake up even on weekends unfortunately.
and as I'm really busy for the rest of the weekend but want to get this brew ready I'll do it first thing when i wake up

Hi, I notice on the photo that you don't use an air lock.
Is the lid of the FV sealed or not ?
I ask because there seems to be some debate as to the usefulness of airlocks.
I am brewing a stout at the moment, and as I don't have an airlock, I am releasing the gas from the FV every few hours by just opening the lid a tad and then re-sealing. It has now calmed down (day 5) and I will probably transfer to bottles next week.

I only ever use an airlock on a demijohn.
Sometimes a stout wants to escape......
So I just snap the lid closed and leav 1/4 un-snapped

What does the crystal malt bring to the brew? I'm new to brewing and am concentrating on dry hopping my ipa's.

Crystal will give you residual sweetness and some enhanced mouthfeel and depending on the colour that you are using, varying degrees of toffee flavour.

1/2 jar honey
50g EKG on 60 min boil
30g EKG & 15g Apollo on 15 min boil
