Honey Brew?

Post by Uncle Joshua » Mon Apr 27, 2020 9:41 pm

I have a jar of honey that I'd like to be to predominant flavour of a beer. Has anyone used it in a kit that has worked well?

You want to add honey after the primary fermentation is done or the vigorous activity will scrub off the honey flavor and aroma. You might also want to steep some honeymalt.

I would boil the honey before adding, but what sort of kit is best to use? I was wondering about a golden ale.

There's no real need to boil honey. Boiling will drive away a lot of flavor and aroma.
A golden ale would work well with more delicate honeys like clover and alfalfa.

How much would you use per 23l

I made Barney’s honey mild once. I racked onto 450g of honey (dissolved in a little warm water) after 4 days of fermentation. I can’t remember how strong the honey taste was but I do know that it kept fermenting for weeks after kegging into a plastic pressure barrel.

I had fitted a pressure gauge to the barrel and even thought I was pouring the odd glass I still had to vent excess pressure almost daily for some weeks.

I'd go with 15-20% of my fermentables, unless I was shooting for a braggot, then I'd use twice that much.
When I brew a honey beer I steep some honeymalt. Maybe a pound in 23l, (.45kg).

I have ordered Mr Beer Craft Beer Kits × 1
Mr Beer Bewitched Amber Ale and was thinking of using 3 jars of honey. Would I need other brewing sugar?
