Pitted stainless steel
I hae a Stainless steel thermopot that I use as my mashtun, and today I noticed that there is pitting starting to develop on the bottom (inside). I have used oxyclean then starsan to clean and sanitize, rinsing both and leave upside down to dry. Am I doing someting wrong, and how should I look after it in the future?

the starsan is acidic but if not left to soak shouldnt be the root of the problem? when u say pitting is it visible? or is it noticable by touch? Im sure your right but i left laundry oxy soaking for too long and it started to crystalise on a pot bottom which then felt rough to the touch and was a sod to scrape/scrub off.
how old is the pot? if new (ish) perhaps its a faulty pot.. i had one with a flaw, as soon as i brought it to the sellers attention with a photo a replacement exchange was arranged.

Yes, the pan is less than a year old, bought from Bergland in Germany ("catering services" on ebay, but I bought direct). Although they have been helpful in th past, I wouldn't expect them to replace it now as I have used it and, frankly, it looked OK when it arrived, so it's probably my fault!
The pitting is visible, about a dozen little spots. I suspect I have left it to soak too long at some point. It would be nice to know what the culprit is (apart from stupidity, of course!). Can it be polished out, or can I just leave it? It's not obviously causing any problem.

Not sure what's caused it but I doubt it will be a problem. Out of interest why do you sanitise a mash tun. I don't sanitise anything that's pre boil.
