As title says - anyone recommend place for suitable replacement?

Which bit needs to be longer, the probe itself or the cable.

Its the cable which is too short, I bought a STC1000 but its not Elitech branded like the other 2 I've bought preciously - dunno maybe a copy? Anyway seller is dicking me about thought I could ask for a partial refund and get a longer cable elsewhere?

You can extend the cable without issue unlike a PT100. Just check the calibration afterwards.

would one of these work, they look like they have a connector/plug on one end - I wonder if you can snip off andwire to the STC1000 - or perhaps they are dedicated to another specific device?

I extended my cable with a bit of speaker wire, seems to work fine

An NTC is just a thermocouple element at the END of a cable. The cable doesn't have to be special at all. Bell/speaker/mains cable are all fine, just use some long & flexible enough for your setup.
This is NOT the case for K type probes etc (as used in thermometers) this needs a special cable.

It doesn't need a special cable. It is just that the resistance of the cable has a greater effect on PT100 as it measures 100 ohms at 0°c whereas an NTC measures around 10kohm.
