I heard about people wiring their Maxi 210 (or 110 or 310) so that the ice bath is constantly on, but the pump is being switched on and of by the temperature control device.
Does anyone have experience with this, and if so; how to...

Just plug in the Maxi 210 so its on and plug the pump into the cooling socket on one of these viewtopic.php?f=8&t=71268 all the microbreweries I have seen use this type of setup to control fermentation temps,

depends what u want to use it for.. if for fermentation chilling Simon12 is on the money,
if for dispensing the pump moves the cold water over the product coils for max chilling so having the pump switched independently of the compressor allows you to serve an evenings beers for minimal chilling costs running the chiller 30-50mins per evening, having the pump switched independently lets u switch it on while pouring to acheive max heat exchange without the compressor running..
if pulling 2-8 pints (waterbath volume dependent) an evening why run a chiller 24/7 as u have no need of the cold store an ice wall would provide no rush hour consecutive pouring

Fwiw i find if pouring on 2 consecutive day the residual cold retained in the insulated waterbath cuts down the time to chill to 0C significantly too...

BTW what sort of fermenters do you have this kind of setup is generally used on larger scale than home brew.

Nice, I am likely to be taking over a small brewery shortly and may get a few of the 625L ones in the future. Is there a thermowell or something in it to get the temp probe in? I assume there must be.

There is if you take the jacketed ones, the regular ones don't have a thermowell, and the best place to add one is via the lid as it's hard to reach inside the fermenter
