If you google DMS it'll give you a breakdown of exactly what it is, apparently causes off flavours and aromas. Try having the lid partially on, should be fine (although can be a job to perch the lid on a Buffalo).
As I say, stirring before power on when you've finished mashing helped to minimise scorching onto the element. I am one of a number of brewers who still had problems and thus modified the boiler, but it was quite simple.
First boiler I had (30 litre version) experienced the same issue you describe toward the end of boil on my 6th AG, then on the next brew it blew the thermal fuse. I upgraded this and no issues after that. Eventually sold this on eBay to get the 40 litre.
Second boiler I upgraded thermal fuse and the thermal cut out after a couple of issues with the wiring on one terminal frying itself (also replaced), worked like a dream afterwards. It's now also in the hands of another brewer as I decided to get a nice custom job off mrlard :)
I reckon its worth getting some spares just in case as I had to sling the whole brew because of the thermal fuse blowing and not having a replacement. There are loads of guides hereabouts and it really isn't difficult as long as you're sensible, elsewise electrickery could fry you...then how will the beer get finished!

Going to fit this into my buffalo, basically as a back up, will keep buffalo element clear (thanks for the tip) prior to boil. Was thinking of making a keggle but this 40 ltr buffalo is plenty for me. On a bit of a budget, and hope this idear will work. Only just started all grain brewing and already I`m making equipment :roll: . I`m on my way to the dark side................ :D
