Great stuff!! I've occasionally wondered about trying this sort of thing, but in all honesty I doubt i have anything like your staying power though all these 'challenges'. Excellent, inspirational in fact, and the very best of luck to you!

Thanks for all the well wishes, even though there is still a way to go yet before the first beer hits the pumps but at least things
are moving in the right direction now, i will post photos of the move and the setting up in the new place plus the mods to the container/brewery
as we still need to partition off a place for fermentaion so it can be temp controlled, but hopefully this will only take a day to sort out.
We are still hopefull to have a beer on for Xmas, which if all goes well should be doable.

Sorry for the delay, but work as been a bit mental and i didnt take that many photos, some of which i did take came out blurred.

The sparge begins with my Heath Robinson sparge ring, but it works wonders

Coming to the boil.
Things got a bit hectic after that and i forgot to take any more photos, it was only a test brew
but it went very well considering, i checked the gravity yesterday and its down at 1015 so a few more
days to go yet before we can keg it.
I`ll keep you posted as to how this beer goes, this by the way is what i brewed.

900g Crystal
700g Wheat
100g Challenger @ 60mins AA7.9%
30g Challenger @ 30mins AA7.9%
20g Challenger @ 20mins AA7.9%
100g Challenger @ 10mins AA7.9%
The target was 92ltrs @ OG1038
but i ended up with 99ltrs in the FV @ OG1040

The first brewday was a bit rushed as it wasnt really setup properly so it was a case of getting the mash on and then tinkering with stuff, but
i just wanted to get a brew on to see how things were going to turn out, the next brewday will be a lot more relaxed though so i`ll try and take more
photos even though they will only be basically the same, but i`m going to do a very big mash and small boil and then let it down to the correct OG afterwards,
The plan is to mash
25kg of grist and sparge to get a final volume of 82ltrs at an OG of 1077 and then let it down with another 82 ltrs of water after the boil,
this will not only double the volume of beer but will also aid with the cooling and i should end up with 164ltrs at OG1039 ish.
Never done this before but i`m informed that its ok to do this.

IMHO if you want to knock out very thin beer as my old old boss used too then thats what it will be. All the best and you may sell a few but brewing small scale is all about flavour. I wouldn't dream about watering down a home brew definitely not a commercial venture. Your selling point should be that my beers are packed with flavour not my beers are like massive commercial water down beer. This is only my opinion.

Assuming the calculation is as simple as:
(target FG - OG) / 2 = X
OG - X = new OG....
82 ltrs @ 1.077 watered down by 82 ltrs will give 164 ltrs of wort @ 1.044 = 4.5% beer.
As for body etc... I would assume that a slightly higher mash temperature will add extra body to compensate for the extra water but I don't know how far you can push a brew before it's just too thin and flavorless.
You may also find that by calculating a recipe for 164ltrs and then only collecting 82ltrs from the mash, you may not have rinsed the grain sufficiently to reach the pre-boil SG.
