noonan make a couple of references to coolships in his new lager brewing book. long shallow troughs which apparently also facilitate the removal of hot break through sedimentation. still used in smaller breweries in eastern europe and the cheq republic.

Seriously, how did/do breweries who used that technique prevent ingress of contaminents, or is fermented beer so anti bacterial in nature that it's not an issue ?

I assumed by the time the beer goes up to the slatted roof for cooling that no yeast head would be present ?

EDIT, I mis read the paragraph.

So the wort has no yeast in it at that stage and enough yeast is pitched so bacteria can't get a foot hold.....got it now :roll:

Forgot to mention that I had visions of the louvres opening and a pidgeon s***ing into the beer :lol:

At the Jennings brewery they have (Or Had! its been a while) open louvers in the fermenting room, and yes pigeons do fly around above the open fermenters :-&

Today this cfc was used for the first time and it performed exactly as expected cooling a 46ltr batch from 90 deg c to 22 deg c at a rate of 3ltr/min, taking about 15c - 16 minutes.

This flow rate could be increased as the coolant had to be restricted to a similar 3ltr/min. Fellow forum member Dan and I came to the conclusion that this flow rate was perfectly adequate and any faster and the hot break AND hops may be drawn through the false botton in the copper.

My shiny plate chiller is now resigned and the cfc prevails :cry: 8)
