Ive struggled over which way to go. I decided to go RIMS as it actually enabled me to save a process step and hence time which is a major factor in my new build. Ive never actually used either. If I was going to use HERMS i would use a separate 6 or 12 liter vessel to improve response times. Here are advantages i see of each, but there is tons of info online and everyone has their own opinion.

RIMs advantages
Faster response times as more direct heat
More Control
More efficient
More flexibility with Mash profiles
Looks much cooler ;-)

RIMS disadvantages
Can scorch the wort
More tricky to clean
More expensive

Herms adv
Cheaper
Wont scorch the wort
Wont explode - need a flow switch with RIMs really
Easier to clean

Herms dis
Slower
Not as efficient

Hope this helps

Use copper for your HERMs and you'll find there is almost no difference. Stainless is where the problem is

I'm still building it. I have a few more panel mods to do and it will be up and running.
