Ferment in cement?

Post by pads72 » Fri Oct 31, 2014 1:19 pm

Just stumbled across this - as yet incomplete US website http://www.concretebeertanks.com but sister site to http://www.concretewinetanks.com
Concrete tanks are sometimes used in wine fermentation instead of stainless or oak. Would this work for beer?

I don't know how porous the concrete would be and depending on that, wouldn't it raise concerns about infection or flavour retention?
Interesting tho'

Looks like cast stone rather concrete. Also looks like a solution looking for a problem. How heavy are they compared to stainless? How easy to clean? And I bet they break more often.

You certainly wouldn't want to drop one on your toe ;)

How weird. Before clicking on your link, I expected to find something along the lines of a Yorkshire Stone Square, with manmade concrete sheets instead of slate. But no, these are some kinda alien pod! So weird.

I'm with Deadfall though, how breakable are they? Stanless steel doesn't crack. Slate is almost unbreakable. But this seems breakable.

Thanks for sharing, I'm intrigued.

So these are some kind of option similar to an ancient Roman/Greek amphora?

Cantilion were playing with these: http://www.cantillon.be/br/3_22

I will be at Cantilion week after next, I'll have to ask how they're getting on.
Ingredients: Water, Barley, Hops, Yeast, Seaweed, Blood, Sweat, The swim bladder of a sturgeon, My enemies tears, Scenes of mild peril, An otter's handbag and Riboflavin.

If you ever come over Seymour you will have to also take a day trip to Brussels. £65 for a return ticket from London when booked ahead, there in 2 hours with Cantilion a 10 minute walk from the station.

Wow, that's insane! I hope to take you up on that someday. Cheers!

I don't think they'll be that fragile but I wouldn't expect to be able to lift one on my own.

My other thought was from my knowledge of building concrete fish ponds. You have to seal the concrete with magic stuff to prevent bad-ass chemicals leeching into the water and killing the fish. I assume they have addressed that somehow. I'm not a fish but I still don't fancy imbibing those chemicals.

Interesting link to the wine stuff. Anyone know roughly what percentage of wine production uses concrete? Not something I've heard of before.

Seen what looks like a load of concrete sceptic tanks being used for wine before on the box.
