Can anyone with more electricity expertise than me, point me in the direction of something that does the same as an STC1000 or Elitech temperature controller BUT for a three phase supply to a PAIR of 3Kw elements?

why not use the stc to control a 3 phase contactor.

Google how to wire a relay. Its the same principle, basically switching a large load voltage or voltage with a different voltage.
Obviously its not a job for a DIY, as it sounds like you will require a fair bit of fixed installation work and 400VAC is not to be trifled with.

There are also 3-phase Solid State Relays (SSRs), which may be better than mechanical types if there is going to be frequent (or rapid) switching. But I say that in relative ignorance of the context. The best way forward would probably be for the qualified non idiot you mention to check the power supply, the elements and how it needs to function etc.

OK, moved on a bit with this. The electrician on site has said that if I can build a single phase control box (similar to our STC/ITC home brew controllers) he can connect it to a three phase relay to control the switching.
So, I want to connect a timer (thinking Inkbird IDT-E2RH) to a PID (thinking Inkbird ITC-100RH). Has anyone any experience of doing this?
