Perhaps I could make a decent size hood with ply and even have 2 inline fans running...
This is your decision point and also your price point.
A close coupled (sit on top) hood is moving a much smaller ammount of air to get the steam away. So you can use a smaller, cheaper fan.
I have considered a permanent installation of one of these with a riser to lift it away when not in use.
A cooker type hood (like youtube) which is further away either above or beside the boiler, will need a much bigger & more expensive fan because it is moving a lot more air to be as efficient. And they tend to drip in cold garages. Close coupled is imo much much better.
