Possible infection?

Post by joeskidmore » Mon Aug 11, 2014 8:38 pm

Hi All,

Quick question regarding a pilsner which is currently fermenting in my fridge at 14 degrees. In the last day or so a few white spots have started appearing on top of the krausen (see pic).

Does this mean the brew is infected and if so, would it be possible to scoop everything from the top and re-pitch a fresh yeast?

Cheers,
- Joe

I have undertaken a bit of research on this topic and seems it has been discussed across many other forums - without a very definitive identification method.

From what I can find out I'm either looking at 'yeast rafts' or 'protein clumps' as referenced here: http://byo.com/porter/item/2511-mystery ... -mr-wizard

Or it could be Brettanomyces pellicle, however, looking at some images I'm not so sure this is the case (http://www.brettanomycesproject.com/gal ... le-photos/)

How's it smell? A possible infection will reveal itself sooner rather than later,

good luck!
