A pint of plain is still very much alive with every pub here in Ireland selling it. The two barrels of the old and the new does not exist anymore with everything being keg, but the two pour technique is still the norm with no rush at all in pouring the pint. The exactness of the amount of head and the total lack of bubbles in the head point to a good pour. Shamrocks and other greetings can also be written in the head. Even though the Guinness, Murphys, Beamish etc is all keg, there are subtle differences in the quality from pub to pub in a local village that get there beer from the same source that can only be put down to the local landlord, and I'm sure some still do some tinkering with the sour.
