One sachet or two?

I'm going to be making a Belgian abbey style beer with an expected OG of 1068 next and I intend to use Wyeast Belgian Abbey yeast. However, I just noticed on the packet that it says it ferments up to 1060, so I will probably need more yeast.
I read somewhere that using too much yeast can produce off flavours, so considering the difference between 1060 and 1068, should I use two full packets or will that be too much - perhaps use one and half instead?

Over pitching usually isn’t a problem for home brewers. Under pitching is the danger, especially here. Ideally you’d make a yeast starter with one pack of liquid yeast, to build up enough viable cells. Just search ‘yeast starter’ on this forum, if you need more info.

Thanks McMullan. I plan to start making my own yeast starters in the New Year (still relatively new to this at the moment) so in the meantime, I could just buy a second packet and add that.

2 packets. As said underpitching is a common homebrew problem
