More ingredients for next brew

Post by Martin the fish » Wed Jan 23, 2008 5:37 am

I've just ordered some 'ingredients' from my new mate Dennis at Dunedin Malthouse. He really couldn't be any more helpful and friendly. 8)

Ingredients
MO 5kg
Chocolate .5kg

Hops
100g Fuggles pellets
100g Challenger pellets
100g Nelson Sauvin(flowers)

I also got two liquid yeast starters-Thames valley and London Ale. Dennis did reel off their numbers but what they were, i can't recall.

Should get a nice ale from that lot. I also have 800g crystal and 100g EKG pellets.

Can one of you brewmeisters out there recommend a recipe from these ingredients? Obviously i'm not expecting to use all the vars of hops, or grain come to that. Unless suggested otherwise. :D Only one of the yeasts will be used too-i plan to split these ala Jim.

I love this AG brewing 8) :D 8)

Cool, thanks DaaB. I have not the slightest idea when it comes to recipe formulation. :?

But i do like building stuff :D

I wouldn't mind having a go at a clone recipe. I particularly fancy having a go at Hogs Back TEA-one of the most memorable beers i've drank. Only had a couple of pints one lunchtime but it was cracking.

Just study the recipes on the forum and see how much of a particular grain is being used in a particular recipe, particularly in comparison to the gravity and to other grains.

I would stick to tried and tested recipes to start with though. If you see a Wheeler recipe, it will be good!.

Dave Line recipes are good but they often need the quantity of grains increasing (around 10-20%) due to an almost impossible extraction efficiency, they also need the hops reducing due to poor storage conditions of homebrewers hops back in the 70s meaning they tended to loose potency. (around 10-20% again)
What about the Norm's almanac recipe's here on the site? I've seen a few of those i wouldn't mind trying. Especially Hogs Back RIP. I've never tasted this but would like to.

Recipe
25ltr OG 1049. ABV 5%. 14units of colour 38EBU

MO 5204g Edit: Got this a bit wrong-3240g
Crystal 1590g
Choc 510g

Hops 90 min boil

Fuggles 66g
Goldings 20g last 15 mins.

seems easy enough and i can add another 1kg crystal to my order in the morning to make up the quantities.

Anyone tried this recipe? Or the actual beer come to that? :D

Thats going to be waaaaaayyyyyyyyy darker than 14 Units of colour

I'll fire up Promash and take a look at it.

Also seems to be a lot more crystal in it that I would like

Are you sure there isn't a typo in there??

I'm getting 1.063 for OG and ~90 Colour units - Way into stout territory,

and 20% crystal - Sickly sweet and cloying (IMO YMMV :D)

Hops look about right though for a 60 minute boil

If you knock it down to

Crystal 159g
Choc 51g

Then you are getting into the right sort of territory

I've tried RIP, it used to be a real favourite of mine. But now I prefer more subtle beers, RIP is a bit of an animal!

The recipe you've entered must have a typo as Aleman says though.
Dan!

Or my dodgy one fingered typing

I think i'll try alemans suggested grain bill.

Thanks guys

The hardest part of AG#2 is deciding on a recipe :=P
