Airlock activity

Well this is day seven of the ferment stage. The airlock activity is down to about one bubble per 5 min interval. I usually do the 10 days in primary then barrel.

Anyways all I can say is the last check Sunday morning a respectful 7.4%abv has been registered. I am toying with the idea of priming the keg with a bit of medium DME however what would be the outcome of such a manouver if I did it.

ie 10 teaspoons if DME in the barrel for 5 gallon.

I have just recently primed with Brewing Sugar. Before this I had exclusively used table sugar.

When I pour a pint, the bubbles are extremely tight. Since this is the first time I have used Brewing Sugar I don't know whether or not I can say that is why I have such a great head on my beer (although it doesn't last as long as I would like) or if it is just that it was such a complex beer!!!

My next batch (due to be kegged fairly soon) should tell me if the sugar is at the heart of things.
