Lambic?
Re: Lambic?
I have toyed with the idea many a time, the problem is the yeast which is particular to the brewery and is wild. they just leave the wort out in huge pans in the loft to become "infected" with wild yeast then bobs your uncle.
whats the link with discharge BTW ? I used to work with a bloke called Nick who reckoned he was the bassist once

Re: Lambic?
I'm making a flanders red ale which is very similar to lambic. Its still maturing so I dont know if i've got 5 gallons of balsamic or a decent beer.
I've got a good supply of aged hops if you need any (you need them for traditional lambic).
Yeast & bacteria, you're best going to one of the blends from white labs or wyeast.

I like the real sour stuff, but it turned out as cherry vinegar. I ended up chucking 2x20 liters after about 3 years. Never again. I'll buy my Lambics from now on.Borodave wrote:Has anyone on here ever brewed Lambic? How long did it take? How did it turn out? How did you make it? ..Not planning on making some, just curious.

Re: Lambic?
I may be stating the obvious but lambics are dirt cheap and ten-a-Euro-cent here in sunny Belgium
It's cheaper for me to buy and drink them and re-use the bottles for my bitters, than it is to make it! Take a trip on the ferry to Zeebrugge and you'll be well served (never been there but it is in Belgium
).

Drinking: Corny 1 - some beer
Corny 2 - some more beer
Bottled - a few different beers
Planning: TC
Elderberry wine

There are some that say he lives only on raw chicken... Oh no! That's The Stig...
There are some that say it is not possible to get a decent lambic brew outside of the areas it is brewed as a matter of course as our local wild yeasts are all the wrong strains.
Others advocate using bruised local fruits to get the wild yeasts from the skins, I guess in the UK, cider apples would be the best to try. I'd stick to a low volume (1 gallon) test brew.
I found a short article that mentions 'lambic' yeast blends...

... however, that is of course not true lambic brewing.
