Wort smells fantastic still but no life from the yeast. Safale pitched - let's see what happens...

Got up and checked this a.m. and now have a lively krausen.

That's the last straw though. From now on every kit I buy will be knocked together with safale or nottingham. Iam fed up with the supplied kit yeast failing or not being stable in secondary.

I've used Safale on every brew bar one, not worth taking the risk

Checked and roused Thurs/Fri/Sat and actually pitched enzyme today - gravity was static at 1.024 and far from the advertised 1.012 to 1.014. This with the failed start of the ferment won't put me off black rock; that'll depend on the problems and the end result.

Let's just say so far I'm not so chuffed.

Hmmm not good so far, could be a one off, but I guess the proof will be in the drinking.

Bearing in mind that it's now stopped at approx 1.012 it is still very sweet. Takes okay though, no real depth but obviously still very green. Having an OG in the mid-40s I'm leaving this one (alright, most of this one) 5 weeks.

Do all three!
Kits when there is no time, or you spy a good kit on sale.
Extract when you have a bit of time, but not enuf for a full mash.
Full Mash when you have time to kill.

I know a bloke who does a full mash, then splits it into 4 litre bottles, to add grain character to his extract brews, when he othewise doesnt have the time.
