Nelson Sauvin Pale Ale

Post by SiHoltye » Mon Mar 23, 2009 10:30 am

Hello,

Plan to use the the highest alpha hops I've tried yet to make a pale ale full of it's signature flavour. What's this like as a schedule?

Ingredients
23L @ 85% efficiency, 90min mash @ 67°C, 90min boil, liquor = sweet pale ale
Amount Item Type % or IBU
3.32 kg Maris Otter (5.9 EBC) Grain 97.08 %
0.10 kg Caramel/Crystal Malt - 60L (120.0 EBC) Grain 2.92 %
15.00 gm Nelson Sauvin [11.50 %] (90 min) Hops 19.2 IBU
5.00 gm Nelson Sauvin [11.50 %] (60 min) Hops 6.0 IBU
10.00 gm Nelson Sauvin [11.50 %] (15 min) Hops 5.9 IBU
10.00 gm Nelson Sauvin [11.50 %] (0 min) (Aroma Hop-Steep) Hops -
1 Pkgs Edinburgh Ale (White Labs #WLP028) Yeast-Ale

Beer Profile
Est Original Gravity: 1.040 SG
Est Final Gravity: 1.011 SG
Estimated Alcohol by Vol: 3.81 %
Bitterness: 31.1 IBU
Est Color: 9.8 EBC

Thanks

I'm thinking around getting the most from the hops, but scrub the 60 minute, having just supped Hophead (finished work early again) it's gotta be the flameout large addition on top of a modest full boil charge.

Am thinking 1.040 beer, 25IBU full boil and double that weight at flameout. Given the hop notes are citrussy/winey and the beers' pale that's gotta be good no? Possibly add 3% Caramalt as well to make a sweet foil to the winey-ness.

Ingredients
23L @ 85% efficiency, 90min mash @ 67°C, 90min boil, liquor = sweet pale ale
Amount Item Type % or IBU
3.23 kg Maris Otter (5.9 EBC) Grain 94.00 %
0.10 kg Caramalt (26.0 EBC) Grain 3.00 %
0.10 kg Caramel/Crystal Malt - 60L (120.0 EBC) Grain 3.00 %
20.00 gm Nelson Sauvin [11.50 %] (90 min) Hops 25.6 IBU
40.00 gm Nelson Sauvin [11.50 %] (0 min) Hops -
1 Pkgs Edinburgh Ale (White Labs #WLP028) Yeast-Ale

Beer Profile
Est Original Gravity: 1.040 SG
Est Final Gravity: 1.011 SG
Estimated Alcohol by Vol: 3.81 %
Bitterness: 25.6 IBU
Est Color: 10.4 EBC

The yeast is a malty one which errs toward my favoured side though not particularly considered in reference to the recipe, but it's the available yeast on Friday.

Being ever-the-fiddler  I'm thinking I definitely want some backbone though not colour so have upped the Caramalt to 5%, adjusted the hops for age, and given my chosen step of force carbonating tends to diminish hop aroma added a post boil steep. Still not sure about the yeast but it's what I have.

Ingredients
23L @ 85% efficiency, 90min mash @ 67°C, 90min boil, liquor = sweet pale ale
Amount Item Type % or IBU
3.26 kg Maris Otter (5.9 EBC) Grain 95.00 %
0.17 kg Caramalt (26.0 EBC) Grain 5.00 %
25.00 gm Nelson Sauvin [10.20 %] (90 min) Hops 28.3 IBU
40.00 gm Nelson Sauvin [10.20 %] (1 min) Hops 1.8 IBU
20.00 gm Nelson Sauvin [10.20 %] (0 min) (Aroma Hop-Steep) Hops -
1 Pkgs Edinburgh Ale (White Labs #WLP028) Yeast-Ale

Beer Profile
Est Original Gravity: 1.040 SG
Est Final Gravity: 1.011 SG
Estimated Alcohol by Vol: 3.81 %
Bitterness: 30.2 IBU
Est Color: 8.1 EBC

I dunno yet! I'm half expecting to open the pack of NS hops and find they're pellets which I can't use with my strainer anyway!

It's a Hophead style brew I'm after. Though perhaps I'm focussing on the fact I've got 3 dry beers kegged now. 1 Notts, 2 HopBack. The yeast choice here should (I think) not produce a dry beer so I may be lurching too far with a full 5% Caramalt. Trouble is I've not used this yeast in a pale before so don't have any experience to call on - just dodgy logic.

I love/hate brewing.

Si, the first beer I did using these hops went like this in a 23 litre brew

10g 90 mins
23g 15 mins
23g 5 mins
34g 0 mins

A/A was 13.8 then

the beer came out as one of my best ever, I used US-05 to let the hops through.

your first hop schedule looks good, where are the hops from? Craftbrewer?

Hops are 2007 Brupaks, bought last week from HopShopUK.

I am interested in this as I am planning a similar beer myself as I am actually starting to develop a taste for these hops. I picked up a bag of 2008 Nelson Sauvin hops from my LHBS for £6.50  last week (this year they are 11.5% AA) so am intending to do a beer along the same lines. I am intrigued by the Edinburgh yeast though - is that supposed to be a clean yeast? Like Garth, I tend towards US-05 now for making clean tasting hoppy beers.

Fermenting: nowt (sadly). Drinking: still a few bottles of my imperial stout knocking about . . . it's rather good now

Reading around the Edinburgh yeast shows up the maltiness. It's similar to WLP002 but lets the hops through more. Need to try it in a familiar style really to find out,

Wow the beer tasted like tomorrow? I knew those NZ hops were good, but that's amazing! :D :D

They smelt pretty good when I just portioned them out.
Just noticed that they're 2008 not 2007 as I said earlier. Due to the ageing allowance I'd made I'd have been nearly 10% out with my IBU's had I not noticed
Looking forward to tomorrow, and a good brew.
