Hey Mysterio, Im thinking of a good brew as a present to a good mate whos wife is about to have their first child and Rochefort 10 seems a winner. How did your recipe turn out, and do you have any tips to get it right?

Shame though, i was really looking forward to hearing about your 6 month old Rochefort 10 clone and how damn good it is. Good luck in your exams, and I promise if i get to make it i'll pm u and send u a bottle. I might punish you by making a Thos.Hardy Ale so you have to age it for 5 years before you can open it.

I've been out of action on the brewing front for quite some time now as well, but i have a starter of ranched rochefort yeast sitting ready so with any luck i'll be having a bash at a rochefort style beer in the very near future (im probably looking at the eight thougth rather than the ten).

Do you actually prefer the 8 to the 10 delboy? The last 8 I had kind of a 'musty' flavour to it, I'm not sure if it was oxidised or that's some characteristic of it.

I never find the 8 musty. I think its actually a bit better than the 10, which imo requires some cellaring to get the best out of it.mysterio wrote:Cheers Addled, appreciate it mate

I did a taste comparison between the 8, Chimay blue and Westmalle dubbel a while back and the 8 came out miles and away the best.
You might have had an overly yeasty bottle?

I'll have to buy a couple of bottles today to double check, and of course the 10 for side by side comparison, what a PITA
It wasnt a yeasty flavour. Musty/dusty/carboardy. Sounds more and more like oxidation the more I think about it.

Yeah it does sound more like oxidation. I think ima going to buy myself a graduation present. A few bottles of that and some AG gear.

Had the 8 and 10 last night. Not had the 8 before and i found it a lot dryer. The 10 is just a big port-winey brute of a beer, but i like in a beer that so i would probably plump for it over the 8.

I'd love to try a 10 but until i do it'll be the 8 recipe that i home in on, it'd be a bit difficult to clone a beer i've never tasted

I've had the 6 and 10. If I'd had the 6 first, I'd have thought it a great beer, but having drunk the 10 first the 6 reminded me just a less complex version of the 10.

Drinking the 8 just now. Definately got a dodgy bottle last time, this is the dogs bollocks. Can't decide whether to crack into the 10 after this for scientific comparison or whether to save it to have with my morning porridge
