I did a brew on Sunday and I left the last sample I took (before adding the yeast) in the trial jar in the kitchen and it has been there since Sunday. I went to throw it this morning and noticed it had started fermenting of its own accord.
Would it be OK to have a quick sip to see what it tastes like once its finished fermenting? Or is it destined for the drain?

By all means have a try but I think you'll find it's wild yeasts and tastes rancid.

So what makes that different to a lambic?

lambics are brewed in a region of belgium thats seems to have wild yeasts that aren't just as disgusting as the typical ones you are likely to find floating about your own house
