S04 yeast

Post by Brewmarc » Mon May 25, 2009 8:40 am

I have brewed a honey ale 31l :D which has been pitched with 1 packet of S04 yeast, its been in the primary FV for about 10 days now at about 18 degrees C, I took a gravity reading yesterday which was 1020 from 1054 :? the airlock is still bubbling but very slowly now only * 1 bubble every 10 seconds or so :? , my question is, is this about right for this yeast or is it a bit slow I have roused it once which did seem to make a slight difference should I leave it a bit longer befoe transfering to secondary FV :? .

*could this be due to the fact that the FV is quite full with little ullage?

I've had S-04 stop at 1020, but yours is still going. Give it a few more days and see?

I've always found SO4 to be crazy fast, and my fermentation temperature is not much higher than yours, only 19–20º. Maybe it doesn't like honey?

I had a similar out come with S-04. I managed to get it to drop to about 1.018 after a bit of rousing. I reckon a second packet would have helped it along when first pitching.

Not the same type of beer at all, but my recent 1048 stout refused to drop below 1017 with S-04.

Fermenting: nowt (sadly). Drinking: still a few bottles of my imperial stout knocking about . . . it's rather good now

Solution: Use S-05 in the future.

Sounds like you underpitched to me.

Like has been mentioned rouse and add a bit of patience, give till 20 days and then rack onto a secondary if it has not got down to 1,017 ish
