I made one of those fermentation chillers last year out of 50mm thick polystyrene sheets, a computer fan, a room thermostat and some heavy duty cardboard. The trouble was I started making it too late (June), I was on holiday in July and didn't get it finished until August by which time our Summer was over!
I used it once in September and it worked well enough. Over the Winter I have reinforced the fermentation chamber with cardboard and added extra insulation with foil backed bubble wrap. I've reinforced the outside too as I found I kept knocking bits off the polystyrene.
I am now ready to brew in a heatwave should I wish to do so.

Also, is this the best thing to do ?
Set the fridge on maximum cooling.
Set the ATC to come on when the temperature reaches 19degC.

I've just checked my cellar and it's still a balmy 18c even after today. I've got a brew of Golden Glory in the FV and checking the thermometer it's only just crepping upto 19c with a heater in. .....jealous yet?

I would say it`s perfect for ale`s. The worst thing that can happen is less fruitiness (slightly more clean profile) in taste.Shadoxhurst wrote:17.5c which is possibly too cold, but at the moment I can only manage a low tech solution... !
