1st TTL, is it off (smells different and is clear as mud)

I’ve just bottled my first TTL, there where some issues on brewday viewtopic.php?f=24&t=26852.

Maybe I’m just thinking it to death but cant help think it has funny smell, slightly acidic, not putrid or obviously off. Smells a little like the tart C02 smell you normally get but a bit stronger, I tasted and it just tasted bitter and a bit green like not ready beer It was also very cloudy after 10 days but i had to let cool overnight so no cold break but protofloc was used.
There seemed to be loads of yeast bed, more than ive noticed before.

Any way as I’ve not made this before and didn’t know if it was right or not so just bottled the lot and will hope for the best.

In short is it obvious if it’s off, I recently got some steak from ASDA was sooo off it made me gag when I sniffed it!

Well this is my first AG ever, the TT Landlord.

Ive just checked it after doing it on Saturday and it has dropped down to a nice 1011. So i have racked it into another vessel with finings adjunct, stirred and left for an hour. Then added 60ml of Allkleer A isinglass and Im now going to leave it till tomorrow to bottle.

I know the CO2 smell you are on about but I assumed that was ok, apart from the Co2 smell it has a lovely aroma!

I would stick with it, maybe it is being over thunked...there is definately a bit of suck it and see here if thats the only thing I have learned!

The way you describe it sounds like it could have an infection (tart acidic), it's totally possible that it's fine and just a bit young, anyway, since you've bottled it you've done all the work now you should let it mature a bit, time is often quite a healer and beers that you thought were awful can suprise you.

That said, infections and wild yeast can often ferment stuff that S-04 or whatever you used can't, that can lead to over carbonation and potential bottle bombs, I don't want to scare you but I would try a bottle a week and I would put them in something that can contain them (I have a big plastic crate that serves well) if you were to have one go bang, a tip is to always bottle 4 pints into a 2ltr pet bottle, that way you can keep a track on how carbonated it is getting from how pressurised the bottle gets (just a quick squeeze).

Excellent tip, thanks for that. Especially as airing cupboard is in kids room, he cant open the door but the smell of spilt beer could be an issue . Ill decant 4 bottles tonight into pop bottle

The airing cupboard is not a good place to keep bottled beer. Far too warm. Maybe move it to the cupboard under the stairs or the garage?

There us no boiler or tank it just has pipes running thro now, never gets that hot.

If it were short of my recording temp what would symptoms on beer be.

No were else short of the living room or other publically displayed area fits the bill and swmbo would have that!

The TTL I brewed is destined for the drain, tried one last night and it’s like beck water but not as fruity , the head/bubbles are very tightly packed and disappear like champagne bubbles, it also tastes very yeasty.

Shame so sorry to hear that...get it done again and move on trust me I have next to no bottles left as this brew was lovely! I did 3 in the end and have got to throw #2 away for the same reason, 1+3 are amazing though!
