My brews

Just thought I would post up to let you know what I currently
have brewing at the moment.

I have 1 batch of Blackberry wine, 2 batches of Banana wine and a batch of
turbo cider.

Banana wine in 1st fermentation bucket (for 5 days)

Now strained and put into demijon to ferment out (cloudy demijon at back)

All brews fermenting out. Demijon at front is 1st batch of banana wine which
has was racked from the 1st demijon after a couple of weeks, to get rid of sediment.

Here you can see how clear it is now. (I will be bottling it tomorrow).

Despite the obvious answer what does the Banana wine taste like ? anything like that banana bread beer taste ?

Hi Thirsty Paul,

This is the 1st time I have made banana wine, so won’t know until I have
bottled and left it for a while and then tasted it.

All I can say is when I siphoned from the 1st fermentation bucket to the demijohn
I got a mouthful of it when I started to siphon, and it tasted quite nice, still quite sweet.

It did taste a bit like banana, but with a touch of lemon. Obviously
by the time it’s all fermented out and then stood in a bottle for a while, it
may taste completely different, and not as sweet.

I will let you know how it tastes once it’s been stood the bottles for a while.

It better taste nice as I have to batches of it to drink :wink:

Did you do the banana wine with or without skins? If with skins it could take considerably longer to mature. I have some in the attic which is almost a year old now and it still has the dry bitter taste of skin off of it, I have heard it takes up to two years for that to mature out.

Yes I did use the banana skins chopped up finely, looks like
I am going to be in for a long wait! :wink:

I'm allergic to bananas (quite badly) but I wodner if the fermentation process removes the stuff that gives me a reaction??

What happens when you eat them - do they make you peel sick?

(There has to be some banana based comedy in there somewhere.....but that wasn't it. I'll get my coat.....)
