my T/C has just about given up fermenting at just under 1000 gravity, what do i do next with it, do i rack off into a clean demijon and let it clear if so for how long and at what temp, its been in the primary for about 6 days now just the odd bubble comes to the top

But seriously, it depends what you want to do with it.
I would taste it first, you might find it a little dry.
If you want it with fizz, you will need some yeast left in suspension for fermentation in the bottle.
If you are absolutely convinced that it has stopped fermenting dissolve 20g of sugar in 100ml of boiling water, let it cool. stir it gently into the bulk of the TC and bottle it.
Leave it to condition as you would bottled beer.

I leave mine for 2 weeks minimum before bottling(with a heaped teaspoon of sugar in each bottle for priming)
If its not clear yet i would leave it somewhere cooler for a few days to help it clear(did this to my TC with honey and muscavado sugar and it has nearly cleared after 3 days in the garage after having fermented for 2 weeks).

I went to clean out one of my cornies the other night only to discover that I still had a few pints of TC left in it from Christmas :shock: What a lovely surprise - needless to say it didn't last long :lol:

Heres my latest 3 batches of TC bottled

1 is all apple
1 is 1 part blueberry 3 parts apple
the last is 2 parts blueberry 2 parts apple

Next to them in the demi john is my latest experiment. Mead!

Just filtered a bunch of water and added honey until gravity was about 1.080 and added some coopers ale yeast and a bit of yeast nutrient.

Going to leave it for about 3 month minimum maybe having a tester about 1.5 months into it ;)

when my TC has finished fermenting, is it best to rack it off into another demijohn for it to clear before bottling,


when bottling how much apple juice shall i use to prime a demijohn full of TC

I didnt bother racking into another demijohn.

If you leave it a while it will clear itself and as long as your careful (and dont mind leaving a little in the bottom of the demijohn) you can just go from demijohn to bottle.

I added a little sugar to each, about half a teaspoon each.

I do the same as Hopkins,but i use a heaped teaspoon of sugar per bottle!

I would begin with 500ml of apple juice per 5 litres, this should give a light sparkle.
You could either rack to a second demijohn and mix the apple juice there (there may not be sufficient room) or add 50 ml of apple juice to each 500ml bottle,
This should give you 10 bottles and a glass of srumpy as your reward for bottling 8)

Would this method sweeten the TC up a bit also?
